i’d like to thank smallnmighty for posting this recipe yesterday because last night’s dinner and this afternoon’s lunch are probably the best i’ve eaten since that time i discovered the strawberry balsamic spinach salad at Nordstrom Cafe.
i changed the recipe slightly due to my no-mayo-unless-it’s-potato-salad-policy:
adapted by me from the original (gangster) recipe from Epicurious:
Cilantro-Lime Crab Salad with Avocado
ingredients:
- 1/3 cup finely chopped red onion
- 3 tablespoons plain Greek yogurt (0%)
- 1 teaspoon dijon mustard
- 2 tablespoons chopped fresh cilantro
- 3 teaspoons fresh lime juice
- 1/2 teaspoon ground cumin
- 1/2 teaspoon grated lime peel
- 8 ounces crabmeat
- 1 ripe large avocado, diced
prep:
Stir red onion, Greek yogurt, mustard, cilantro, lime juice, cumin and lime peel in medium bowl to blend. Mix in crabmeat. Season salad with salt and pepper. Dice avocado and serve on top or to the side of crab salad.
